Ingredients
- Pork: 1 kg
- Onions: 3 medium sized
- Ginger: 1 ½ inch long
- Garlic: 1 whole
- Green chillies: 3
- Turmeric powder: 1 tsp
- Fermented bamboo shoot: 4 tbsps
- Hot water: 500 ml
- Salt: to taste
Directions
- Clean and cut the pork into serving portions.
- Peel the onions and wash. Chop the onions.
- Peel and wash the ginger.
- Peel and wash the garlic.
- Make a paste of the ginger, garlic and red chillies.
- Heat a heavy bottom pan and upon medium heat put the pork pieces and cover.
- Cook stirring occasionally till the fat comes out and the meat turns brown.
- Take the pork out of the pan and in the fat of the pork fry chopped onions, ginger, garlic and chilli paste.
- When brown add turmeric powder, salt and pork. Fry for sometime.
- Add the bamboo shoot. Stir for about five minutes.
- Add the hot water and bring to boil.
- Simmer covered upon low heat.
- When the meat is done and the gravy thickens remove the pan from fire.
- Serve hot with steamed rice.
